A soft freezer, read from the back wall
When ice cream goes soft and nothing looks broken, the back wall is where we look first. The freezer is the side that defrosts itself: on the older 600-series built-ins it carries a heater, a thermostat-style switch that cuts the heater off again and a warmed trough that carries meltwater away. Lose any one of the three and frost gathers over the coil, a little more each cycle, until air stops passing through. Sub-Zero recommends 0°F for a freezer; a display well above that for a day, with frost you can see, is a repair call rather than a wait.
The freezer in the garage
Indoor Sub-Zero models are meant to live in a room kept from 60°F up to 90°F. An unheated garage can fall below that on a winter night and climb above it on a summer afternoon, and a unit outside its range can struggle with every part healthy. For a space that will go unheated, Sub-Zero’s advice is to switch the unit off, let it reach room temperature and dry it out, never to use antifreeze, and to drain the ice maker’s water line, which on several product lines is a job for service.
Garages are dusty too. The frame shows a replacement fan motor going in beside the condenser coil at the base of a unit, the old one caked on the floor; a coil furred with garage dust makes that fan and the compressor work harder, which is why the manufacturer’s interval of six to twelve months between condenser cleanings is worth keeping to out there.

The compressor never cycled off, loud enough to hear from the dining room. Condenser was packed with dust and the fan blade fouled. Cleaned, checked on gauges, and it rests between cycles again.
